Recipe: Chocolate Waffles for Valentine’s Day

Cary, NC – Go out to dinner at one of Cary’s fantastic restaurants for Valentine’s Day.  And don’t forget a dozen roses and a box of chocolates.

But to really start the day with a little help from Cupid, treat your Valentine with the unexpected. Maybe breakfast in bed, or a chocolaty surprise for the kids before they go off to school.

Begin the day dedicated to love with this breakfast menu that will have your Valentine sweet on you.

Chocolate Waffles

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup white sugar
  • 1/2 cup cocoa powder
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 4 Tbs butter, melted

Sauce

  • 1 Tbs butter, softened
  • 3/4 cup confectioners’ sugar
  • 1/2 tsp vanilla extract
  • 1 tsp milk
  1. Preheat waffle iron. In a large mixing bowl, stir together flour, baking powder, salt, sugar and cocoa. Stir in milk, eggs, vanilla and butter until mixture is smooth. Add chocolate chips.
  2. To make sweet sauce: stir together softened butter, confectioners’ sugar, vanilla extract and milk. Sauce should be fairly stiff.
  3. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot with sweet sauce.

Serve the waffles with fresh strawberries or try this raspberry compote.

Raspberry Compote

  • 3/4 lb raspberries
  • 1/2 cup sugar
  • 2 tsp lemon juice
  • 1 cup low-fat vanilla yogurt
  1. Combine all ingredients, except yogurt, in a heavy saucepan over medium heat.
  2. Cover and simmer 5-7 minutes or until sauce is formed.
  3. Serve berries with a dollop of vanilla yogurt.

If your Valentine doesn’t mind a little sparkle in the morning, here is a sweet idea.

Champagne Cocktail

In a champagne glass, pour in a shot of raspberry liqueur, like Chambord. Top with champagne and garnish with a fresh raspberry or two.
