Black Eyed Peas For Good Luck in 2013

Cary, NC- Its a tradition here in North Carolina to eat black eyed peas on New Year’s Day- and if you have a side of collards, you’ll really be in the money for 2013.Last year we published a very popular recipe for Hoppin’ John.  It’s basically black eyed peas cooked with some onion, pepper and chopped carrots. This year I would like to add another way to consume your black eyed peas- as a dip!

Hummus Made from Black Eyed Peas

I am a big fan of hummus and have made it the traditional way with chick peas for years. We are attending a party tomorrow night that requests we bring an appetizer. What better one to bring than a dip made with the requisite bean to bring the guests good luck- and without the smell of collards! And this requires no cooking, just open a couple cans and use a Cuisinart, or a blender and you are ready to join the party.

Bring the dip with a side of toasted pita chips (recipe follows)

Recipe For Hummus

Makes about 2 cups of dip.

You will need:

  • 2 cans of black eyed peas- your favorite brand. (drain but reserve the liquid)
  • 1 teaspoon chopped garlic
  • juice of 1 lemon
  • 2 T tahini  paste
  • pepper to taste

To Make:

In a blender or Cuisinart add the garlic with the peas and mix til well blended. Add juice of lemon and liquid from one can of peas. Blend again. Add pepper to taste. Voila- a dip so simple and so delicious you are sure to have a happy and healthy New Year!

Pita Chips

Ingredients

  • 1 pkg of 4-6 pita bread (with pocket)
  • olive oil
  • kosher salt
  • pepper
  • garlic powder

To Make:

Heat oven to 350. Cut pita in half to create 2 rounds from each. Cut each round into 6 triangular slices.  Blush each pita wedge with a little olive oil and place on a rimmed baking sheet. Sprinkle each wedge with garlic powder, salt and pepper. Place in oven for about 10 min or until golden brown and crisp.

Allow to cool before serving. Can be stored in an air tight container for about 1 week.

I place the dip in a central bowl on a platter and arrange the pita chips all around it as a great – and healthy- twist on tortilla chips and dip.
